Sprouted Ancient Grains

Our pasta begins with organic, sprouted Canadian ancient grains.

Sprouting is the natural process of soaking the grain in water so mother nature can do all the breakdown. This is the first stage in the process of Pastorey Pasta. Mother nature breaks down the stored proteins and starches and wakes up all the nutrients that were asleep inside the germ. This allows the germ to come out of the grain and come alive!

We choose sprouted ancient grains because they offer exceptional nutrition, rich flavour, and honour traditional food preparation methods that have been used for generations.

 

Sourdough Fermented

The second stage in the process of Pastorey Pasta

During this process, beneficial microorganisms grow in numbers, and breakdown the gluten molecules further, creating deeper flavour and contributing to a more traditional pasta-making method.

Rather than rushing production, we allow time to do what it does best—develop character, complexity, and exceptional taste.

Functional Superfoods

Every ingredient we add has a reason for being there.

We carefully select functional ingredients like vegetable powders, mushroom powders, roots, herbs, sea vegetables, and berries to complement our ancient grains and create unique pasta varieties.

Some ingredients add vibrant natural colour. Others contribute distinctive flavours or valuable plant-based nutrients. Together, they allow us to create pasta that's both delicious and thoughtfully crafted.

Naturally Air Dried

Once our pasta is made, we don't rush the finishing process. Air Drying is the final stage of the Pastorey process.

We slowly air dry each batch using traditional methods that help preserve the integrity of the dough while developing the texture that makes handcrafted pasta so enjoyable.

Slow drying allows the pasta to maintain its quality and creates a firm texture that cooks beautifully and holds sauces exceptionally well.

Good pasta simply can't be rushed.
