FUN GUY!! Why I add them to my pasta

Hello everyone,

Today is such a beautiful summer day. I love how long the days are and summer is finally here. I would prefer to be at the beach today with my girls, but Im making noodles and decided I needed to write a blog with my extra time. So today I wanted to write about why I use mushrooms in my pasta and I wanted to share that with you.

Im always looking to blend traditional techniques with deeply nourishing ingredients. Some standout superfoods making their way into my sprouted sourdough pasta are Lions Mane, Chaga, and Cordyceps mushrooms!!! Can you believe I even just said that! These 3 mushrooms have been gaining popularity in the health and wellness community for their numerous benefits. But what exactly makes these mushrooms so special and why did I decided to add them to my artisan pasta?

Lion's Mane is known for its unique appearance, resembling a lion's mane, and its potential health benefits, particularly for brain health and cognitive function. It is also believed to have anti-inflammatory and antioxidant properties, which can benefit overall brain health. Im creating a new noodle and Ive decided to add this mushroom yet again for its neuropathy qualities! There is a certain group of people that have nerve pain especially in their feet, so I am beyond thrilled to announce in the coming weeks what I have created!

Chaga, on the other hand, is a type of mushroom that grows on birch trees in cold climates. Its known for its immune-boosting properties and helps with organ function. Chaga mushroom is packed with antioxidants, which help protect cells the cells from damage caused by free radicals. These antioxidants may help boost the immune system, reduce inflammation, and support overall health and well-being. Chaga is also rich in vitamins and minerals, including vitamin D, which is essential for immune function.

Ive also gotten my hands on some cordyceps mushrooms. Oh and by the way all these mushrooms are local to the Okanagan! But lets get back to the amazing health benefits to cordyceps. This amazing mushroom increases ATP in our cells! What is ATP you are thinking? ATP is energy, but lets think of it like this... Your brain, your heart, your muscles all need energy to work. Your cells are the vehicles transporting the energy and ATP is the fuel to get the cells around. This seems like such a small thing, but really, if you think about it, what a huge job ATP is doing for your whole body! Our vehicles need fuel and the fuel station is your mouth eating healthy Pastorey Pasta! Cordyceps also helps with immune system, it's an anti-inflammatory, gives respiratory support, heart health, anti-aging, and anti-cancer qualities. Like seriously, how is this even at all possible to have in your pasta!

My sprouted sourdough pasta is already gentle on digestion thanks to the sprouting and fermenting processes.  Adding functional mushrooms brings adaptogenic support, which can help your body handle stress and balance its energy without caffeine or sugar.

Beyond the health benefits, these mushrooms bring a subtle depth to the pasta. Its a natural fit with out traditional farmhouse style and makes for a uniquely satisfying meal.
